Last Fall I spent some time in Cognac doing a series of photo shoots for Hennessy.
The images in this post are of the Cognac grape harvest shot at vineyards and distilleries as well as the homes of Guillaume and Frederic, two of the independent growers that sell their grapes to Hennessy.

The Mast Brothers chocolate factory is New York City's only bean to bar chocolate factory. These photos illustrate
the whole process by which the cacao beans are roasted, ground up, processed, aged, tempered and packaged.
There is a dedication to purity and an intensity of flavor in their chocolate which is very unusual.

One of the things that really drew me to Il Buco was the design of the space. It's really organic and natural, not too slick or overly thought-out. The space is just really dark and cozy,
all warm brick and dark wooden furniture. Everything is very rustic, in a charming way.

My favorite part of the restaurant is the chandeliers, which are made out of pots and pans and teapots and other kitchen items. It's so simple, but it's perfect for the restaurant.
At the bottom of this post you can check out Ignacio's recipe for his persimmon salad.

Il Buco is one of my favorite restaurants in NYC. The space started out as an antique shop in the '90s and at one point they just decided to start serving food, so the space still has all the quirky reminders of its past.
The design is really organic and natural, it's not slick or overly thought-out. I think the chef, Ignacio Mattos, is doing something really interesting and creative with Italian food, taking its traditions and customs
and stripping them down and making them seasonal and local in a fresh way. Stay tuned for Part 3, including a recipe for persimmon salad.

The chefs in the kitchen at Il Buco have to work all day to get everything prepared for lunch and dinner. The make the pasta fresh every day and start early to make sure they bake enough bread for the customers.
Ela Schmidt is the pastry chef at Il Buco. She starts work every morning at seven to prep for the day. My favorite of her desserts is the panna cotta. It's so luscious and decadent. Ignacio was kind enough to share her recipe with me.

Martin and his sons Tod and Jay have a wonderful hand-tailored, union-run garment factory in Brooklyn. They make their own custom
suits as well as suits for many of my favorite American designers. Martin started working at the company as a floor boy in 1947 and
worked his way up to the top. He is a super styling dapper gentleman, a testament to the American dream and a true inspiration.

I have known Dan for a few years, he is a super nice guy and a great photographer. I especially like the photos he has done of Erin Wasson and of his girlfriend Shannan. Shannan is also really sweet and a very talented artist, I got some photos of her doing a painting on her front porch. I went by Dan and Shannan's new country house a few months ago and I really loved the vibe of their home. They have big barn that he uses as a studio, and another barn which is for guests to sleep in and acts as a big party / dining area in addition to their main house. Something I discovered on this shoot is that Dan is a great cook. He made us a really nice butternut squash soup for lunch and sent me home with a jar of home made pickles. Thanks for the hospitality guys.

Xavier Veilhan is having a show of his work around the gardens and inside the main chateau of Versailles. If you are in paris I highly recommend going to see it before it comes down on December 13th. Xavier is one of my favorite artists and his show really blew me away.

Here are some of my favorite images from the work I have been doing for Nike 6.0 the past few months. I traveled to Tahiti, Georgia, Florida, NJ and Brooklyn to shoot some of Nike 6.0's top athletes in their environments. My photos, watercolor paintings, videos and written question and answers are being used on Nike 6.0's ad campaign as well as on the Nike 6.0 website. This project has been so much fun to work on! Thanks Nike!

I spent a couple of weeks in tokyo shooting for The Selby recently. Some of those shoots are going to be exclusively for my upcoming book "The Selby Is In Your Place" being published by Abrams in May 2010. The rest will be posted on theselby.com so stay tuned. This gallery includes photos that I did of NYC entrepreneurs in collaboration with Cole Rood & Haan. All of the people shot for this project run businesses that have to do with taking old things and making them new again in interesting ways. This concept also seemed like a timely idea as there is a lot of DIY spirit in NYC these days.
